Chioggia Beets are sometimes called Candystripe Beet or Bull's Eye Beet and is distinguished from other varieties by the alternating concentric rings of scarlet red and white inside. There is variation in the amount of coloration, with some being nearly completely red, others almost white, and every combination between those two extremes. Many people say these beets are sweeter, milder or more peppery than the typical red beets.

After cooking, the flesh turns completely pale pink, which is why it is preferred in its raw form. It matures very early and has a mild flavor, and so requires less cooking time than most varieties of beet. The green leaves are an excellent spinach substitute.
