Ricotta-Pear Ravioli with a Walnut Gorgonzola Cream Sauce

I had this amazing dish at this great Italian restaurant in the East Village and wanted to try to recreate it. This is my version of their gorgonzola-pear ravioli with an amaretto cream sauce.
