1 cup Couscous

2 Tbsps Olive Oil

1  Mango, peeled, pitted, cut into cubes (about 1 cup)

Jalapeņo Pepper, seeded, minced

1/2 cups Raisins

Tomatoes, Chopped

juice from 1 Lime

1/4 cup loosly packe Cilantro, chopped

1/4 packed Parsley, chopped

 Salt, to taste

1. Prepare couscous as directed with product.

2. In large skillet or pot heat 1 Tbsp olive oil over high heat. Add mango cubes, garlic, jalapeno. Cook, stirring for about 3 minutes or until mango begins to color.

3. Stir in remaining 1 Tbsp oil, the couscous, raisins, tomato, lime juice, cilantro, and parsley. Toss well for a minute, while heating. Salt to taste.
Serve hot or at room temperature.
