1 cup Flour
1/4 cup Corn Meal
1 cup Water, Or more as needed
1 tsp Salt, or more to taste
1 tsp Fajita Seasoning, Can substiute any savory seasoning
1 Black Pepper, To taste. Fresh ground is always best!
1 pound Shrimp, Deveined, tails on. Should be about 24 count per pound.
4 cups Peanut Oil, Can substitute corn or vegetable oil
Mix the flour, cornmeal, seasoning, salt, pepper and water. The batter should be the consistancy of cake batter. Add more water as needed.
Heat the oil in a pot until it is about 350 degrees. a drop of batter should bubble and sizzle when added.
Drag the shrimp through the batter until they are covered. Add them one at a time to the hot oil and cook for 2-3 minutes until nicely golden brown. For best results, cook only 5 or 6 at a time. Remove from oil and let sit on a paper towel for a few minutes. Serve immediately!
