1 head Bok Choy, chiffonaded

1 cup Bean Sprouts

Red Bell Pepper, julienned

1 tbsp Olive Oil

1 lb Crocodile Tail Meat, sliced thinly, lengthwise


Tomato / Lemongrass Salsa

Tomatoes, diced

1/2 Red Onion, diced

2 tbsps Garlic Chives, chopped

1 tbsp Lemon Grass, grated

1 tbsp Fish Sauce

1 tbsp Olive Oil

1 tsp Cilantro, chopped


1. Mix bok choy, sprouts, and peppers.

2. Pan sear crocodile meat in a non-stick pan with olive oil and set atop bok choy mixture

3. Finish with salsa

4. Season with salt and pepper

For The Salsa:

1. In a mixing bowl, toss all ingredients together for salsa and let sit 1 hour before using
