Description: Sitting around one Sunday afternoon, I decided to experiment and try to create a chili recipe. I played around in the kitchen, tweaking the seasonings and amounts until I came up with this recipe. And if I must say so myself, it is one of the best chilis I have ever had. Enjoy!

Onions, large, chopped

2 tbsps Garlic, minced

2 lbs Ground Beef

5 tbsps Chili Powder

1 tbsp Ground Paprika

2 tsps Ground Cumin

1 tsp Allspice

1 tbsp Oregano

1/2 tsp Cayenne Pepper

1 tsp Salt

3 cups Water

1- 6oz can Tomato Paste

1 can Red Kidney Beans

1/2 tbsp Honey

1 tbsp Olive Oil

In a large pot, heat the olive oil and cook the onions and garlic until the onions are tender (4-5 minutes). Add the beef and cook until the beef is no longer pink (7-10 minutes). Toss in the chili powder, paprika, cumin, allspice, oregano, cayenne pepper, and salt. Next, add the water, kidney beans, and tomato paste. Stir until tomato paste is dissolved and then add the honey. Cover and lower heat. Let simmer for at least 15 more minutes.

This was the first time I ever tried chili - it was great and it went so fast!! Instead of using red kidney beans, we used pinto beans and pink beans. The pinto beans were a little mushy but I liked the way they mixed with the chili. The two beans also gave a nice color to the chili. Very delicious!!

I tried this recipe and it was phenomenal. I tried it Cincinnati-style and served it over some spaghetti with sprinkled raw, chopped onions and shredded cheddar on top. Amazing!
