Beef Skillet with Cheesy Biscuits

Description: I've made this recipe several times and I must say that I enjoy making it more and more every time. Any recipe that allows me to just dump in a bunch of ingredients is definitely a keeper.

2 lbs Ground Beef

1 can Black Beans

1-16oz jar Salsa

3/4 cup Cheddar Cheese, shredded


Biscuits

2 cups All-Purpose Flour

3 tsps Baking Powder

1 tsp Salt

1 1/2 cups Milk

1/2 stick Butter, melted

1 cup Cheddar Cheese, shredded

In a cast iron skillet, cook the ground beef until no longer pink. Next add the black beans, salsa,and cheddar and combine. Let simmer while preparing the dumpling batter.

In a bowl combine all of the ingredients minus the cheese. Once well combined, stir in the cheese.

Drop large spoonfuls of the batter on top of the beef (should make about 6 dumplings) and put skillet into a 350 degree oven for 20 to 25 minutes.

Tips:
*If you don't have a cast iron skillet, cook the beef, add the salsa and beans, then transfer to a baking dish before topping with the dumplings and baking in the oven.
*Serve with a dollop of sour cream.
