Thai Style Peanut Sauce

Description: This is a delicious dipping sauce for Chicken Satay, spring rolls and tons of other Thai dishes.

1/4 TO 1/2 cups Creamy Peanut Butter, Sweetened is ok, Skippy and JIF brands work well here.

1 cup Coconut Milk

1/2 tsps Garlic, minced

1 Tbsp Fish Sauce

1 tsp Red Curry Paste, Add more or less to taste.

1 Tbsp Lime Juice, Fresh squeezed is best, about 1 lime

Spring Onions, sliced

1 tsp Light Brown Sugar, OPTIONAL: If you are using unsweetened peanut butter, you will want to add some sugar.

Stir ingredients together with a whisk over low heat, do not allow it to boil. Start with 1/4 cup of peanut butter, and add more if needed if mixture does not turn creamy after about 3 or 4 minutes. When it's ready, the mixture will be a uniform color and creaminess.
