In a large bowl, beat together the butter and brown sugar. Add in the eggs, baking soda, and salt to combine. Next, beat in the flour and oats until you have a thick batter. Mix in the dried cranberries and white chocolate chips.
Using an ice cream scooper (or large spoon) place dollops on a cookie sheet. The cookie dough will be very thick and will not flatten during baking like other cookie doughs (thus the name 'Pillowy Oatmeal Cookie') so press them down with a spoon or you palm to the desired thickness. Bake in a pre-heated 375 degree oven for 10-12 minutes.
Subtle sweetness is right. These are up there among the best cookies I've ever had. Even my picky brother couldn't get enough of these when I made them. A sure winner.
