Description: A delicious, fresh-tasting, Middle Eastern 'salad' goes well with so many of the other basics like falafel.

1/2 cup Bulgur Wheat

1 cup Parsley, chopped

2 medium Tomatoes, diced

1 small Onion, minced

2 tbsps Mint Leaves, minced

1/4 cup Lemon Juice

1/4 cup Extra Virgin Olive Oil

1 tsp Salt, or to taste

Soak the bulgur wheat in water and let stand for 15 minutes.
Drain well and toss with all of the rest of the ingredients in a large bowl.

Chill in the refrigerator for at least an hour before serving.
