A delicious, fresh-tasting, Middle Eastern 'salad' goes well with so many of the other basics like falafel.

Directions
Soak the bulgur wheat in water and let stand for 15 minutes.
Drain well and toss with all of the rest of the ingredients in a large bowl.

Chill in the refrigerator for at least an hour before serving.
