Description: I was never really a huge fan of your traditional fruit salad; I always thought it was a bit boring. Thanks to my mom, I now have an amazing variation for a fruit salad recipe. Now, instead of the bits of fruit swimming around and getting soggy, they're suspended in a sweet cream.

30-oz can Fruit Cocktail in Syrup, Strain and reserve 1 1/4 cup of the syrup

1 can Evaporated Milk

12 oz Cream Cheese, room temperature

1/2 cup Sugar

1 tsp Vanilla Extract

1 packet Unflavored Gelatin

1. Bring the reserved syrup and the gelatin to a boil over medium heat.

2. In a bowl, beat cream cheese then add the sugar and beat together. Stir in the evaporated milk and vanilla.

3. Combine the gelatin mixture, the cream cheese mixture, and the fruit in a bowl and place in the refrigerator for at least 4 hours.

When I first saw this recipe I thought to myself, 'this sounds kind of scary.' I made it anyway, looked at it and thought, 'this looks kind of scary.' But then I tried it and the first thing that came to my head was, 'oh my god this is awesome!' I've since made it with one can of pears and one can of peaches and I think I like it even better. This recipe is amazing!
