Grate the green bananas with the coarse side of a box grater, stir in the adobo and set aside.
In a non-stick pot heat the vegetable oil and render down the salt pork. Add the rest of the ingredients and cook until the pork cubes are almost done (about 15 minutes). Pour in the green banana paste and cook - stirring constantly - until almost cooked through (about another 10 minutes). Let cool and stuff your favorite bird.
If you don't want to stuff the bird, add a little more adobo and be sure to cook the pork and green banana fully.
