Description: I've always loved cannolis and I was determined to figure out how to make the cream first... the next step is learning how to make the shells.

2 cups Ricotta Cheese

5 tbsps Sugar

2 tsps Vanilla Extract

Add all of the ingredients to a blender and blend on high for at least a minute or until completely smooth. Let cool in the fridge before enjoying.

TIP: A mixer will not make the cream as smooth as a blender will... definitely use a blender if available.

I love cannolis too and this recipe is just about as good as I've had. I added a 1/2 tsp of cinnamon in the mix and it gave it an interesting almost-chocolatey hint. Very good!
