Mix all of the batter ingredients until they come together. The consistency will be significantly thinner than pancake batter.
In a blender, mix together all of the ingredients until smooth and creamy. Set aside.
In a small pot bring the strawberries and sugar to a simmer over medium-low heat. Mash the strawberries and set the sauce aside.
Spray a frying pan with non-stick cooking spray. Pour 1/4 of the batter into the pan and tip the pan to spread the batter thin. Cook over medium heat until the edges start to pull away. Flip and cook a few more seconds on the other side.
Place some of the filling in the center. Fold in the top and bottom of the blintz and then roll starting from one side to create a small cigar shape. Crisp a little and then serve with a little strawberry sauce pour over top.
Finish off with a dusting of powdered sugar if desired.
