Maple-Banana-Nut Muffins

This is a great recipe to rival any banana-nut muffins I've ever tasted. They're great for dessert, with coffee, or as a sweet side for your breakfast.

Preheat oven to 375 degrees and lightly butter 24 muffin tins.

In a large bowl, mash the bananas and then mix in the vanilla, maple syrup, sugar, and vegetable oil. Once combined add the flour, baking powder, salt, and cinnamon. Stir together until the batter just comes together. (Stir any longer and the muffins won't rise properly)

Fold in the walnuts and pour the batter into the muffin tins. Bake for 15-20 minutes until a toothpick stuck in a muffin comes out clean. Let cool a little and then turn out the muffins.
