Description: I saw a feature on the Food Network about Cracker Barrel and they talked about their most popular dish - Chicken and Dumplings. It looked so good that a month later I went South to find a Cracker Barrel and I had their Chicken and Dumplings... SO TASTY!!! I was determined to create it at home and I came up with this recipe. Hope you all enjoy.

2-3 lbs Chicken Breast, boneless, skinless

2 32 oz containers Low-Sodium Chicken Broth

Bay Leaves

1 tsp Dried Thyme

1 tbsp Lemon Juice

 Salt and Pepper, to taste


Dumplings

2 1/4 cups All-Purpose Flour

1 tbsp Baking Powder

1 1/4 tsps Salt

1 cup Milk

Place the chicken in a large pot. Add the thyme and bay leaves and pour in the chicken broth. Bring to a simmer, cover, and cook for 45 minutes.

*In the meantime, combine the flour, baking powder, and salt in a bowl. Stir in the milk and let dumpling dough rest for 5-10 minutes.

Roll out the dough to a 1/4" thickness and cut your dumplings into your favorite shape - 1 1/2" squares work well.*

Once cooked, remove the chicken to a separate bowl and discard the bay leaves. Add the lemon juice and season with salt and pepper to taste; while the broth is still simmering drop in the dumplings and stir lightly. (They will rise to the surface, puff up, and eventually sink.) Cook for 30 minutes.

When the dumplings are almost ready, cut the chicken into cubes and add back in with the dumplings. Another 10 minutes and you'll be ready for some delicious chicken and dumplings.
