Mixed Veggies and Bean Thread Noodles

This is a delicious preparation of bean-thread noodles. If you aren't familiar with them, they are a delicious chewy noodle made from beans that show up frequently in Korean cooking. This is a relatively simple preparation, and can be made with any meat.

Boil bean thread noodles in lightly salted water for 3-4 minutes until they become clear and soft. Drain and cut into 2-3 inch segments. Marinate beef with 2 Tbsp soy sauce, 1 Tbsp sesame oil, Mirin, 1 tsp sesame seeds and garlic for about 10 minutes. Slice all vegetables into julienne strips. heat Canola oil in skillet and cook all vegetables for 2-4 minutes. I prefer them slightly crisp. Remove and set aside. repeat process with meat. Add noodles to a bowl with 1 tsp sesame seeds, 1 Tbsp soy sauce and 1/3 Tbsp sesame oil. Add all other cooked ingredients and mix well. Delicious!
