Mixed Veggies and Bean Thread Noodles

Description: This is a delicious preparation of bean-thread noodles. If you aren't familiar with them, they are a delicious chewy noodle made from beans that show up frequently in Korean cooking. This is a relatively simple preparation, and can be made with any meat.

3 Tbsps Soy Sauce, Divide, 2 Tbsp for marinade, 1 for finish

1 1/3 Tbsp Roasted Sesame Seed Oil, Divide in 2 parts, 1 Tbsp for marrinade, 1/3 for seasoning

1 tsp Mirin, can substituet white wine vinegar

1 clove Garlic, Crushed

2 ounces Bean Thread Noodles

Scallions, slice thinly

Green Bell Pepper, sliced into slivers

1 tsp Canola Oil, or any neutural oil

 Black Pepper

6 ounces Beef, Sliced thin. Cut into julienne strips.

Carrots, slice into slivers

Shiitake Mushrooms, Remove stems and slice thin. If using dried, remove stems, soak in water for 15 minutes, then slice thin.

2 tsp Sesame Seeds, divide in half

Boil bean thread noodles in lightly salted water for 3-4 minutes until they become clear and soft. Drain and cut into 2-3 inch segments. Marinate beef with 2 Tbsp soy sauce, 1 Tbsp sesame oil, Mirin, 1 tsp sesame seeds and garlic for about 10 minutes. Slice all vegetables into julienne strips. heat Canola oil in skillet and cook all vegetables for 2-4 minutes. I prefer them slightly crisp. Remove and set aside. repeat process with meat. Add noodles to a bowl with 1 tsp sesame seeds, 1 Tbsp soy sauce and 1/3 Tbsp sesame oil. Add all other cooked ingredients and mix well. Delicious!
