Description: A classic summer drink that has its origins in Cuba but is becoming very popular in high-end bars, lounges, and clubs in the large metropolises around America.

6 - 8 Mint Leaves, fresh

2 tsps Sugar

3 Tbsps Lime Juice, freshly squeezed

1.5 ounces Light Rum, 1 shot

 Seltzer

In a tall glass, add the sugar and most of the mint. Crush the mint in the bottom of the glass using the sugar as an abrasive to help release some of the mint oils. Add the lime juice and stir to dissolve the sugar. Top with ice. Add rum and stir. Top off with cold seltzer. Garnish with a lime wedge and the 1 or 2 mint leaves.
