Cook pasta per the directions on the package. Preheat oven to 400 degrees. In a saucepan cook sausage and onions until sausage is browned on all sides, approximately 15 minutes. Stir in rigatoni, ricotta cheese, mozzeralla cheese and pasta sauce. Place all ingredients into baking dish, cover with foil and bake for 20 minutes. Remove foil and bake for another 5 - 10 minutes.
Tip: Put the sausage in the freezer to harden up for about 30 minutes. This will make it easier to cut them neatly.
