Balti Chicken with Chili Peppers

Description: Spicy and zesty, this recipe explodes with flavor. Frying the spices in oil releases their full flavor for a delicious Indian dish that's not just another curry.

5 Tbsps Corn Oil

Green Chiles, Can use any green chili. Cut chilis in half.

1/2 tsps Cumin Seeds

Curry Leaves

1 tsp Ginger, mash into a pulp, or use ginger pulp found in most indian stores

1 tsp Chili Powder

2 tsp Garlic, smashed

1 1/2 tsp Lemon Juice

Onion, chopped into 1/2 inch pieces

1 pound Chicken, Skinned and de-boned, Chop into 1 inch cubes

2 tbsp Cilantro, Chopped fine

10 Cherry Tomatoes

 Salt, to taste

Heat the oil in a skillet and add green chilies. Fry until the skin starts to change color and they are slightly soft. Remove the chilies and add the cumin seeds, curry leaves, ginger and garlic. Add salt to taste and fry for about 10 seconds stirring rapidly. Add the chicken to the spice mix and fry for 8-10 minutes or until done. Add cilantro and sprinkle with lemon juice. Add cherry tomatoes and chilies and cook for 1 minute. Serve hot!
